Bulk Fermentation
Is Finished

Bulk fermentation is one of the most important stages in sourdough bread making—and one of the easiest to misunderstand.
You mix the dough, perform a few folds, cover the bowl, and wait. The recipe may say “bulk ferment for four hours,” but after four hours your dough may still look flat and heavy. Or it may already be airy, fragile, and close to over-fermented.
So which one should you trust: the clock or the dough?
Always trust the dough.
Bulk fermentation does not finish at exactly the same time in every kitchen. Temperature, starter strength, flour, hydration, and dough size can all change the speed of fermentation. Your job is not to follow the timer blindly. Your job is to notice when the dough has developed enough gas, strength, and elasticity to move on to shaping.
Here is how to recognize that moment.

What Is Bulk Fermentation?

Bulk fermentation begins after the starter has been mixed into the dough and continues until the dough is divided or shaped.
During this stage, wild yeast produces carbon dioxide. The dough begins to rise, while bacteria create acids and develop flavor. At the same time, the gluten structure becomes stronger through folds, rest, and fermentation.
This is when the dough changes from a heavy, sticky mass into something lighter, smoother, and full of life.
If bulk fermentation ends too early, the bread may be dense, tight, and poorly risen.
If it continues too long, the dough may become weak, sticky, and difficult to shape.
The goal is to stop at the point where the dough is well fermented but still strong enough to hold its shape.

Why the Clock Is Not Enough

A recipe may tell you to bulk ferment for four or five hours, but that is only a guideline.
A dough fermenting at 28°C will move much faster than the same dough at 20°C. A strong, recently fed starter will work faster than a weak starter taken from the refrigerator. Whole-grain flour usually ferments faster than white flour because it contains more minerals and nutrients.
Even the amount of starter matters. A dough made with 25% starter will ferment faster than one made with 10%.
This is why two bakers can follow the same recipe and get completely different results.
Use time as a reference, but watch the dough itself.

1. The Dough Has Increased in Volume

The first sign is a visible rise.
However, sourdough does not always need to double during bulk fermentation. In fact, waiting for a full doubling can lead to over-fermentation, especially in a warm kitchen or when the dough will later spend many hours in the refrigerator.
For many sourdough recipes, an increase of about 30–50% is enough.
In a warm kitchen, you may stop closer to a 30% rise. In a cooler kitchen, the dough may safely rise by 50–70%.
A straight-sided container makes this much easier to judge. Mark the dough level with a rubber band or piece of tape when bulk fermentation begins.

2. The Surface Looks Smoother and Slightly Domed

At the beginning, the dough may look rough, uneven, and sticky.
As fermentation progresses, the surface usually becomes smoother. The dough may form a gentle dome instead of lying completely flat in the bowl.
This rounded surface shows that gas is building inside and the dough has enough strength to hold it.
Be careful, though. A very large, puffy dome is not always better. If the dough looks extremely inflated and fragile, it may already be going too far.

3. You Can See Bubbles Along the Sides

Look through the side of the container.
Small and medium bubbles should begin to appear inside the dough. You may also see bubbles just under the surface.
These bubbles are a good sign because they show that fermentation is active throughout the dough—not only on top.
A few bubbles are normal. A dough completely filled with very large bubbles may be close to over-fermented.
Do not pop every bubble when you see it. They are part of the structure you are trying to build.

4. The Dough Feels Lighter and Airier

This is one of the most useful signs.
At the beginning of bulk fermentation, the dough feels dense and heavy. Later, it begins to feel lighter when you touch or lift it.
Wet your fingers and gently press the surface. Properly fermented dough should feel soft, elastic, and slightly inflated.
It should not feel like a solid lump anymore.
With experience, you will notice this change before you even look at the clock. The dough feels alive in your hands.

5. The Dough Jiggles When You Move the Container

Gently shake or tap the bowl.
A dough that is approaching the end of bulk fermentation will often wobble or jiggle slightly. It should move as one soft, aerated mass.
Very young dough barely moves because it is still dense.
Over-fermented dough may look extremely loose, weak, and almost fluid.
You are looking for a gentle wobble—not a bowl of soup.

6. The Edges Look Rounded, Not Flat

Pay attention to the place where the dough touches the sides of the container.
At the beginning, the edges often look flat and heavy. As fermentation progresses, the dough starts pulling upward and the edges become more rounded.
You may see a curved line where the dough rises against the container.
This is another sign that gas is building and the structure is becoming lighter.

7. The Dough Stretches Without Tearing Easily

During the first part of bulk fermentation, stretching and folding may feel difficult. The dough may tear or resist.
Later, it should feel smoother and more elastic.
Lift a small section with wet fingers. It should stretch gently without breaking immediately.
This does not mean you need a perfect windowpane test at the end of bulk fermentation. You are simply checking whether the dough has developed enough strength to hold gas.
If it tears very easily, it may still need more time—or the gluten may be weak for another reason.

    8. The Aroma Has Changed

    Freshly mixed dough mainly smells like flour.
    As fermentation develops, the aroma becomes more complex. It may smell mildly sweet, creamy, fruity, or pleasantly tangy.
    A balanced sourdough aroma is a good sign.
    If the dough smells strongly of alcohol, vinegar, or harsh acid, it may have fermented too long or too warm.
    Your nose can often warn you before the dough completely loses its structure.

    What Does Under-Fermented Dough Look Like?

    Under-fermented dough usually:
    • has risen very little
    • feels dense and heavy
    • has few visible bubbles
    • tears easily
    • does not jiggle
    • feels tight during shaping.
    Bread made from under-fermented dough often has a dense crumb, poor oven spring, and large tunnels surrounded by tight areas.
    The solution is usually simple: give the dough more time and keep it warmer.

    What Does Over-Fermented Dough Look Like?

    Over-fermented dough often:
    • feels very sticky and loose
    • spreads quickly after being turned out
    • has weak surface tension
    • tears during shaping
    • contains many large bubbles
    • smells strongly sour or alcoholic
    • collapses when handled.
    Once the gluten has weakened too much, shaping becomes difficult.
    You may still bake it in a loaf pan or turn it into focaccia, but it may not hold a free-standing shape well.

    A Practical Temperature Guide

    These times are only rough estimates for dough made with an active starter:

    Do not use this table as a strict schedule. Use it to know when to begin checking the dough more closely.

    The Best Way to Judge Bulk Fermentation

    Do not rely on one sign alone.

    A dough may have bubbles but still need more time. It may rise in volume but remain weak. It may feel airy but already be too fragile.
    Look for several signs together:
    • noticeable rise
    • smooth, slightly domed surface
    • bubbles along the sides
    • soft, airy texture
    • gentle jiggle
    • good elasticity
    • pleasant fermented aroma.
    When most of these signs are present, the dough is usually ready for pre-shaping or shaping.
    Learning bulk fermentation is less about memorizing a number and more about learning the language of dough.
    At first, it may feel confusing. One day the dough is ready in four hours, and another day it needs six. That is normal.
    The more often you bake, the easier it becomes to notice the small changes: the way the dough lifts from the bowl, the way it trembles when moved, the bubbles under the surface, and the lighter feeling in your hands.
    Watch the dough, not only the timer.
    The clock can guide you—but the dough gives the final answer.
