Why Does My Sourdough Spread After Scoring?





You turn the dough out of the proofing basket, and everything looks promising. The loaf is tall, the surface feels firm, and the shape is holding beautifully. Then you make the first cut with the blade—and the dough begins to widen.

A little movement after scoring is normal. The cut releases some of the tension in the outer surface, allowing the loaf to expand in the oven. But if the dough quickly loses height, flows outward, or becomes difficult to transfer, the score has revealed a weakness that was already present.

The problem may be overproofing, insufficient gluten strength, excessive hydration, warm dough, or simply the way the loaf was scored. Looking at how quickly it spreads—and how it behaves in the oven—can help you find the real cause.

A Small Amount of Spreading Is Normal

The shaped loaf is held together partly by the tension created during shaping. Scoring cuts through this tight outer layer so the dough has a controlled place to expand.

Because that surface tension has been interrupted, even healthy dough may relax slightly after the cut. It may become a little wider while still keeping a rounded top and supported edges.

Troubled dough behaves differently. It sinks quickly, the cut opens very wide, and the sides move outward instead of remaining upright. The loaf may look as though the blade released all the air inside it.

The important question is not whether the dough moves at all, but whether it still looks strong after the score.

Scoring Often Reveals a Problem Rather Than Causing It

It is easy to blame the blade when a loaf collapses immediately after scoring. In many cases, however, the cut only exposes a structure that was already too weak to support the dough.

A well-developed loaf can tolerate a decisive score because its gluten network remains elastic and strong. A weak or overproofed loaf may hold together while its surface is unbroken, but once that outer skin is cut, the dough no longer has enough internal strength to maintain its height.

This is why changing the scoring technique alone may not solve the problem. You also need to consider fermentation, hydration, flour strength, and dough temperature.

    The Loaf May Be Overproofed

    Overproofing is one of the most common reasons sourdough spreads after scoring.

    As the dough proofs, it fills with gas and becomes lighter. If proofing continues too long, the gluten eventually loses elasticity. The loaf may still look large and attractive in the basket, but its structure has become fragile.

    An overproofed loaf often feels very soft when turned out. The surface may look slightly wrinkled, and an indentation made with a finger may remain without slowly springing back. When scored, the cut opens immediately and the loaf begins to flatten.

    Try shortening the final proof the next time. If you use a cold proof, remember that fermentation continues while the dough cools in the refrigerator. Dough placed in the refrigerator when it is already fully proofed may become overproofed before baking.

    The Gluten Structure May Be Too Weak

    Dough needs enough gluten strength to support itself after the surface has been cut.

    If the dough remained loose during bulk fermentation, tore during folds, or never became smooth and elastic, it may not have developed a strong enough network. The shaped loaf can appear stable in the basket because the basket supports its sides. Once it is turned out and scored, that support disappears.

    Good structure is built before shaping. Appropriate mixing, resting, and several well-timed folds during the first part of bulk fermentation can help the dough become more cohesive.

    The flour also matters. Flour that is too weak for the recipe’s hydration may produce dough that stretches easily but cannot hold its shape after scoring.

    The Hydration May Be Too High

    High-hydration dough naturally spreads more than firm dough. This does not mean wet dough cannot produce a tall loaf, but it requires strong flour, careful fermentation, and confident shaping.

    If the loaf repeatedly becomes flat after scoring, reduce the water slightly the next time. Even a small adjustment can make the dough easier to strengthen and shape.

    Avoid adding a large amount of flour during shaping. It may dry the surface, but it will not repair the weak structure inside the dough. It is better to adjust the water during mixing and add any reserved water only when the dough is strong enough to handle it.

    The Score May Be Too Deep or Too Complicated

    A score needs to be deep enough to guide expansion, but an excessively deep cut can weaken the loaf.

    For most sourdough loaves, the main expansion score does not need to reach far into the center. A clean cut about 6–12 mm, or roughly ¼–½ inch, is usually enough. Holding the blade at an angle can help create an ear, while a more vertical cut encourages the loaf to open evenly.

    Several deep decorative cuts can divide the surface into weak sections. If your dough is soft, begin with one simple, confident score. Decorative scoring works best on dough that is well developed, correctly proofed, and firm from refrigeration.

    Use a sharp blade and move quickly. A dull blade can drag the dough, tear the surface, and press gas out of the loaf.

    Warm Dough Spreads Faster

    Cold dough is usually easier to score because it feels firmer and the blade moves through the surface more cleanly. Warm dough is softer, stickier, and more extensible, so it can relax quickly once the surface is cut.

    If you cold-proof the loaf, score it immediately after taking it from the refrigerator. There is usually no need to let it warm first.

    Make sure the oven and Dutch oven are completely preheated before turning out the dough. Once the loaf has been scored, it should go into the oven without a long delay. Leaving it on the counter gives it more time to spread.

      Can a Spreading Loaf Still Be Saved?

      If the loaf begins to widen after scoring, bake it immediately. A fully preheated Dutch oven can provide side support and trap steam, giving the bread its best chance of rising upward.

      Use parchment as a sling so you can transfer the dough without pulling or stretching it. Do not try to reshape a loaf after it has been scored. Reshaping will remove gas, damage the surface, and usually make the problem worse.

      A loaf that has spread severely can still make good bread, although it may be flatter than planned. If the dough is extremely weak before scoring, baking it in a loaf pan may be safer. Very loose dough can also be transferred to an oiled tray and baked as focaccia.

      What the Baked Loaf Can Tell You

      A wide loaf with little oven spring and a compressed crumb often points to overproofing or weak gluten.

      If the loaf spreads but still develops a light crumb and good oven spring, the dough may simply have been very wet, or the score may have been too deep. A loaf with a dense crumb and several large tunnels may have been underfermented, even though it felt loose.

      Judge the score, the shape, and the crumb together. The way the loaf spreads before baking is only one part of the diagnosis.

        Scoring should guide the expansion of the loaf, not provide its structure. That structure must already be present through gluten development, fermentation, shaping, and proper proofing.

        A healthy loaf may relax slightly when cut, but it will not immediately collapse. Its sides will remain supported, the cut will open in a controlled way, and the dough will still have enough strength to rise in the oven.

        When that balance is right, the blade does not make the loaf spread. It simply gives the bread a place to open.
