Why Does My Sourdough Stick to the Proofing Basket?





You finish shaping the loaf, place it carefully into a well-floured proofing basket, and leave it to rise. Everything seems fine until it is time to bake. You turn the basket over, but the dough stays exactly where it is.

A gentle shake does nothing. When the dough finally begins to release, part of its surface remains attached to the basket. The loaf stretches, tears, loses gas, and spreads across the parchment.

This is frustrating, but it is usually preventable. Sourdough sticks to a proofing basket when moisture from the dough reaches the basket and turns the flour between them into paste. The type of flour, condition of the basket, dough hydration, fermentation, and temperature all influence how easily the loaf releases.

The Basket Is Not Always the Main Problem

It is natural to blame the banneton when dough sticks, especially if the basket is new. But the basket may only reveal a problem that began earlier.

A strong, well-shaped loaf has a smooth outer skin that stays relatively dry. A weak or overfermented loaf feels wetter and softer. Its surface gradually absorbs the flour in the basket, making it much more likely to stick.

Before adding a thick layer of flour, look at the dough itself. Did it hold its shape after shaping? Was it unusually warm or sticky? Had it already fermented a little too far? These details often explain more than the basket does.

Rice Flour Creates a Better Barrier

Regular wheat flour absorbs moisture from the dough and contains gluten-forming proteins. After several hours of contact with a wet loaf, it can become sticky and glue-like.

Rice flour behaves differently. It does not form gluten, and it stays dry for longer.
This makes it one of the most reliable choices for dusting a proofing basket.

You can use pure rice flour or mix it with wheat flour. A mixture of equal parts rice flour and bread flour works well for many loaves. For very wet dough or a long cold proof, pure rice flour usually provides better protection.

Dust the basket evenly, paying attention to the grooves and sides.
You need enough flour to create a visible barrier, but the dough should not sit in a deep layer of loose flour.

If you use a cloth liner, rub the flour into the fabric instead of simply sprinkling it over the surface. Loose flour can move aside when the dough is placed in the basket, leaving damp areas where sticking begins.

A New Banneton Needs Preparation

A brand-new rattan basket often has a smooth, dry surface that does not hold flour very well. The first few loaves may stick because the flour falls out of the grooves instead of forming an even coating.

Before the first use, lightly mist the inside of the basket with water and dust it with rice flour. Shake out the excess and allow the basket to dry completely. This creates a thin flour coating that helps future dustings stay in place.

Do not soak a rattan banneton. Too much water can cause it to warp or develop mold if it dries slowly.

With regular use, the basket gradually becomes seasoned. A small amount of flour remains in the grooves, creating a more dependable surface. It should look lightly coated, not covered with thick layers of old damp flour.

The Dough Surface May Be Too Wet

Even a prepared basket can struggle with dough that has a very wet surface.

After final shaping, the outer skin should feel smooth and slightly tacky, but not soaked or smeared. If wet hands, too much bench water, or a loose shaping technique leave the outside covered with moisture, the basket flour will quickly absorb it.

Use only as much water as necessary when handling the dough. During final shaping, work on a mostly dry surface so that you can create enough tension around the loaf.

Dust the shaped dough lightly before placing it into the banneton. This gives you a second protective layer: flour on the basket and flour on the surface of the loaf.

Place the dough into the basket carefully. For a traditional loaf that will be turned out and scored, the smooth side usually goes down and the seam faces upward.

High-Hydration Dough Needs More Support

A high-hydration sourdough naturally contains more moisture and is more likely to stick. This does not mean you must avoid wet dough, but the flour and fermentation must provide enough strength to hold that water.

If the dough remains loose throughout bulk fermentation, spreads after every fold, and cannot develop a smooth outer skin, the hydration may be too high for the flour being used.

Adding more flour to the basket may hide the problem temporarily, but it will not strengthen the loaf. A small reduction in recipe water can make shaping and releasing much easier.

Strong gluten development also matters. A well-developed dough lifts as one cohesive piece and keeps its surface intact. Weak dough sinks into the basket grooves and attaches itself more firmly as it proofs.

    Overproofed Dough Sticks More Easily

    Overproofing is one of the most common reasons a loaf refuses to leave the basket.

    As fermentation continues, the dough becomes softer and more fragile. Acids and enzymes gradually weaken its structure. The surface that was firm after shaping can become damp and delicate by the end of proofing.

    An overproofed loaf may fill the basket completely, feel very airy, and wobble when moved. When turned out, it stretches under its own weight. Even if it releases, it may spread quickly and lose volume.

    If this happens regularly, shorten the final proof or end bulk fermentation earlier. More basket flour cannot fully protect dough that has already lost its strength.

    Cold Dough Usually Releases More Cleanly

    A cold proof can make sourdough easier to handle. Chilled dough is firmer, its surface is less sticky, and it usually holds its shape better when turned out.

    After an overnight proof in the refrigerator, remove the basket only when the oven and baking surface are ready. Turn out, score, and bake the loaf while it is still cold.

    Make sure the basket is covered in the refrigerator. Uncovered dough can develop a thick, dry skin, while poorly covered dough in a humid refrigerator may collect condensation. A cover that protects the loaf without touching its surface works best.

    Cold proofing helps with handling, but it cannot repair severely overfermented or structurally weak dough.

    How to Release Dough Without Tearing It

    Place a piece of parchment or a bread sling over the basket. Hold the basket and baking surface together, then invert them in one confident movement.

    Lift the basket slowly. In many cases, the dough will release after a few seconds.

    If one section remains attached, do not pull the loaf downward. Set the basket back slightly and gently loosen the edge with your fingers or a thin plastic dough scraper. When using a cloth liner, carefully peel the fabric away from the dough instead of pulling the dough away from the fabric.

    A small surface tear does not necessarily ruin the bread. Score and bake it promptly. If the loaf collapses badly and can no longer hold a free-standing shape, transfer it to a bread pan rather than reshaping it repeatedly.

    Keep the Basket Clean and Dry

    After removing the dough, shake out loose flour and allow the basket to dry completely. Brush away any damp pieces of dough before storing it.

    A banneton should never be stored while moist. Good airflow prevents mold and keeps old flour from developing an unpleasant smell.

    You do not need to wash the basket after every use. Regular drying and brushing are usually enough. If you use a removable liner, wash it when necessary and let it dry fully before returning it to the basket.
